Chocolate Chip Muffins – Stevia


4 organic eggs
3 tbsp organic runny honey
1 small tsp vanilla or chocolate Via-Health Stevia (25-30 drops)
150 g spelt
3 tsk cream of tartar or wheat and aluminum free baking powder
80g melted butter
100g dark chocolate, chopped

Heat your oven to 180 degrees. Mix well together eggs, honey and stevia. Add the rest and mix gently. Put in muffin molds and bake for around 10-12 minutes.

If you poke your cakes with uncooked spaghetti and the spaghetti comes out clean, they are baked all way through. If the spaghetti does not come clean out you need some extra minutes in the oven.

I advise you though not to overbake since the cake/muffins, can then become dry and less tasteful.
