Vegetable lasagna with basil pesto

Oh how we all love this wonderful vegetable lasagna and the great news is that this is very easy to prepare, so do not let the long list of ingredients scare you away! But it needs to cook for about an hour, so you need around 90 minutes to make this in total.
Serve it with green pesto and a nice salad and you will loooove me afterwards!

♥ Waffles are a wonderful way to give your children healthy whole grains. Everybody loves warm bread and that is what a waffle is essentially! And what I love is that it takes only around 5 minutes to make waffle dough and then you can start baking, although you do need a waffle iron. My 11 year old son (and my husband for that matter:) can make a waffle dough in no time!
What is spelt?
Spelt is an ancient grain, with a deep, nutlike, slightly sweet flavor, that traces its heritage back long before many wheat hybrids. Many of its benefits come from the fact that it offers a broader spectrum of nutrients compared to many of its cousins in the wheat family, and the fact that it is more easily digested than other gluten grains since it is water soluble.

Most French chocolate cakes contain around 180g sugar. I use 140g and 20 drops of vanilla or caramel stevia instead. I feel the end result is the same :)
