And just FYI, I love coffee, coffee and a cake .. midday .. I so do! But I can't drink coffee every day, it makes me anxious, so I drink organic English breakfast tea with almond milk. I do not miss coffee, when I do :)
For those who cannot even tolerate the spelt waffles (they are much easier on the stomach than the typical wheat waffles since the gluten in spelt is water soluble) you do not have to despair!
These are wonderful as well and very easy to make. I also love them with butter and jam :)
It's easy and delicious to swap the white refined sugar in cakes and treats with dates. Dates are filled with vitamins and minerals and they do not have a distinct taste, they only taste sweet. They make this cake soft and lovely. I hope you try it!
The frosting for the cake:
70g melted butter (or about 50g cold pressed coconut oil)
70g organic maple syrup or dark agave syrup.
4 tbsp pure cacao powder
Mix everything well together and spread on your cake ...
Just like all recipes I post on this website this is a favorite loved dearly by everybody. My Hanna is now 14 and has been making these all by her self for the last two years whenever she feels like it :)

Pancakes have been enjoyed at tea time in Icelandic homes for centuries (as in many other countries) .. Some love them with sugar inside, others love whipped cream and jam. My son often asks his grandmother to make pancakes when he comes over for a visit .. and she always does :) The pancakes she makes as well as my grandmothers and mother are very, very thin and that is how we love them (and it makes it easier to eat many without becoming full too soon!)

This cake is called 'matrimonial bliss´ in Iceland .. This a very old recipe, which I think every Icelandic family has and fond memories to go with it. It is much loved to say the least and that is because it is very quick and easy to make and it tastes delicious.

Most French chocolate cakes contain around 180g sugar. I use 140g and 20 drops of vanilla or caramel stevia instead. I feel the end result is the same :)
