Spelt spaghetti with basil, rucola & sundried tomatoes, yum!

This one is so seriously delicious, it is a firm favorite in my home, takes no time to prepare!

Cook Time: 10 mins
Yields: 4

Ingredients

  • 400g spelt or kamut pasta or spaghetti
  • 3 garlic cloves
  • 25-50g fresh basil
  • 70-100g rucola
  • 100ml (or more) coldpressed olive oil
  • 100g sundried tomatoes in olive oil (I love LaSelva tomatoes)
  • 50g parmesan cheese
  • 50-70g pine nuts, roasted
  • 50g shredded cheese you like (Optional! .. I like mozzarella or other you love, I recommend full fat cheese)

Method

  1. Boil the pasta/spaghetti according to instructions on the packet (usually around 10 min for pasta and 8min for spaghetti and I recommend 1 tbsp of olive oil into the cooking water).
  2. Put the garlic, basil, half of the rucola, olive oil, half of the sundried tomatoes, parmesan and half of the roasted pine nuts in a food processor or blender and mix well. I add a little salt and pepper to this.
  3. If the sundried tomatoes you bought only have olive oil on them (no additives or other) I use the oil as well for this "pesto".
  4. Put the cooked pasta/spaghetti in a big bowl and mix in the pesto you just made.
  5. Decorate with the rest of the rucola, sundried tomatoes, pine nuts and shredded cheese. Enjoy!

    looks like a great alternative to a wheat pasta dish to me…
    and basil…..and rocket…mmmm…make it for all the poor
    wheat sensitive….
