Spelt mozzarella buns (yeast free!)

I love these. I have made them so often with my soups and stew I’ve lost count many, many years ago. I hope they will serve you and your family as well as they have served me and mine.

It takes only 5 minutes to make them. Remember to turn on your oven in the beginning.

*** Attention! These are best enjoyed with loads of olive oil and himalaya or seasalt 🙂

Spelt mozzarella buns

Prep Time: 5 mins
Cook Time: 20-25 mins
Yields: 10 ca (depending on size)

Ingredients

  • 350g wholewheat spelt
  • 3 tsp wheat and aluminium free baking powder
  • 1 tsp seasalt or himalayasalt
  • 100g shredded mozzarella
  • 3 tbsp garlic olive oil (or olive oil and 2 garlic cloves pressed)
  • 200 ml coconut milk or organic yoghurt (pure)
  • 100-200 ml warm (boiled) water (start with 100ml)

Method

  1. Heat oven to 190°C/fan 170°C/gas 5
  2. Blend together the dry ingredients.
  3. Add the cheese and blend as little as possible.
  4. Add the rest but start with 100ml warm water. Stir together and if the dough is too stiff/dry, immediately add 100ml warm (boiled) water more. This is not a dough you can knead. This is a very wet dough you stir with a spoon gently until everything sticks together. No more than that!
  5. Using baking paper on your oven tray, put dots with two spoons until you have finished your dough and bake until golden or for around 20-25 minutes.

    I have iFlix on my phone.. so whomever has iFlix on their pc or phone will see it… anywhere in Asia! Your show was there, the whole 2 series! I got addicted to it. I do love pesto and I have never tried it in soups, but since watching your show, I do use it now as a “secret weapon.” Thank you and more power! 🙂
