Quick, easy and healthy spelt bread

Ingredients

  • 170g wholegrain spelt
  • 100g fine spelt
  • 30g sesame seeds (or other you love)
  • 40g oatmeal or desiccated coconut
  • 1 tsp sea salt
  • 3 tsp cream of tartar or wheat and aluminum free baking powder
  • 200ml organic Greek yoghurt (or plain yoghurt)
  • 80ml hot water
  • Pumpkin seeds or other you love, to garnish

Method

  1. Heat your oven to 180 degrees Celsius.
  2. Mix the dry ingredients together and then the water and yoghurt. Mix gently together.
  3. Add more water or yoghurt if needed. Put baking paper on your oven tray and put the dough in a bread like shape on the baking paper (not in a bread mold).
  4. Bake it naked like that for around 30 minutes or until baked through. You can always poke your bread/cakes with a uncooked spaghetti or small knife to see if baked through. If the spaghetti/knife comes clean out, it is done. But try not to overbake since it will make the bread too dry.

Additional Info

♥ You can add any seeds or chopped nuts into the dough as you like. Chopped walnuts I specially like as well as sesame and pumpkin seeds. You could also add garlic, olives etc.
