Lovely vegetable quiche

This wonderful simple meal (love it!) takes around 1 hour to be ready but it is hardly no work, your oven does most of the work for you!

Cook Time: 1 hour
Yields: 4-5


  • FIRST:
  • 1 leek
  • 1/2 sweet potato (or potatoes)
  • 1/2 zucchini (or other vegetables you love)
  • 6 small tomatoes
  • 1 tsp seasalt
  • 4-5 tbsp coldpressed olive oil
  • 1 garlic clove
  • 4 organic eggs
  • 100 ml soured cream
  • 50 ml cream
  • 1 tsp seasalt
  • 1/2 tsp black pepper (or peppermix)
  • 100g shredded mozzarella, more if you like
  • 1-2 handfulls fresh basil (saving 1 handfull to decorate the pie with, once ready)


  1. FIRST:
  2. Heat your oven to 180°C.
  3. Cut the leek quite finely and even it out in a oven proof dish.
  4. Pour olive oil into a glass jar and press garlic into it. Mix it well and pour some of the garlic olive oil over the leek.
  5. Wash the sweet potato and zucchini (I buy organic) and slice it thinly.
  6. Sort the slices over the leek (see photo) and brush with the olive garlic oil.
  7. Cut the tomates in half, put on top of the sweet potato and zucchini slices.
  8. Add the seasalt evenly.
  9. Put this in your oven for around 30 minutes.
  11. Mix everything together and pour over the cooked vegetables.
  12. Cook for around 30 minutess or until golden and beautiful.

Additional Info

♥ Serve with green pesto or feta & some lovely salad .. your choice!
