Icelandic pancakes

Pancakes have been enjoyed at tea time in Icelandic homes for centuries (as in many other countries) .. Some love them with sugar inside, others love whipped cream and jam. My son often asks his grandmother to make pancakes when he comes over for a visit .. and she always does 🙂 The pancakes she makes as well as my grandmothers and mother are very, very thin and that is how we love them (and it makes it easier to eat many without becoming full too soon!)

I use organic fine spelt in my pancakes.

My Recipe

Prep Time: 10 mins
Cook Time: 20 mins
Yields:

Ingredients

  • 400g fine spelt
  • 2 tsp aluminium free baking powder
  • 2 tsp lemon essence or vanilla essence
  • 2-3 eggs (I always buy organic)
  • 1 L milk (organic)
  • 100g melted butter
  • Just a little butter for the pancake pan

Method

  1. Stir everything together, melted butter last.
  2. Heat your pancake pan, add a little bit of butter and start baking very thin pancakes.
  3. As soon as the pancake becomes bubbly on the one side, it is time to turn it over. On the other side it only needs around 10 seconds and then it is done.

    I often visit your website and have noticed that you don’t
    update it often. More frequent updates will give your blog
    higher authority & rank in google. I know that writing posts takes a lot
    of time, but you can always help yourself with miftolo’s tools which
    will shorten the time of creating an article to a few seconds.
