Hazelnut Christmas cookies

This is a recipe from my grandmother Thora, I always make them every Christmas ♥


Prep Time: 10 mins
Cook Time: 10-12 mins
Yields: 12-15

Ingredients

  • 150g butter, organic
  • 50g maple syrup, organic
  • 100g palm sugar or raw cane sugar, organic
  • 2 happy eggs (organic)
  • 250g spelt (white, organic)
  • ½ tsp seasalt
  • 2 tsp baking powder (aluminium free)
  • 1 tsp vanilla powder
  • 3 tbsp warm water
  • 100g hazelnuts – chopped (I chop them in my blender)
  • 100g 70% chocolate – chopped

Method

  1. Set your oven to 185°C.
  2. Melt the butter, put in a bowl, add the maple syrup and sugar and then the eggs. Beat together gently.
  3. Add the rest and blend together.
  4. Put around 1 tsp on a baking paper using your oven tray.
  5. Bake for around 10-12 minutes.

Additional Info

Best kept in the freezer – delicious to warm them up again in the oven, they will be like you just baked them.
