Gluten free caramel delight

I love this one. Did you know that dates are the best option to sweeten your life with. I highly recommend them for your cakes, smoothies etc.

 

And it is perfect to give small children dates (pitted!) as candy. Probably best to cut them in half for a young child. They will be very happy with dates (prunes and other dried fruit) for their first few years 🙂 .. I recommend organic dates. If you buy non organic dried fruit it can have been treated with sulphur dioxide. I advise you to read the list of ingredients. It is forbidden to use sulphur if the dried fruit is organic.

 

Now this cake is easy to make ..


My Recipe

Prep Time: 10 mins
Cook Time: 30 mins
Yields: 10

Ingredients

  • 250g pitted dates (organic)
  • 100ml water and 100g butter
  • 20 drops vanilla or caramel stevia (OR 1 tbsp coconut palm sugar) - optional for extra sweetness
  • 2 eggs
  • 50g rice flour or almond flour (or other gluten free flour but you can use spelt of course too but that is not gluten free)
  • 1/2 tsp cinnamon, 1 tsp vanilla essence, 1/2 tsp sea salt
  • 2 tsp aluminium free baking powder
  • CARAMEL SAUCE
  • 3 tbsp coconut palm sugar
  • 2 tbsp maple syrup (organic)
  • 100 ml cream
  • 80g butter

Method

  1. Heat your oven to 180°C
  2. Put your dates, water and butter in a small to medium sized saucepan and let the butter melt and the dates become soft (takes around 2-3 minutes)
  3. Puree this together in your blender or with a handheld blender.
  4. Put in a bowl and add the rest of the ingredients.
  5. Put your dough in a 24cm tin (I alwas place a baking paper inside the tin but it is optional) and bake for around 28-30 minutes or until a pin comes clean out if you stick it in the middle of your cake.
  6. CARAMEL SAUCE
  7. Put all your ingredients in a rather small saucepan and let it boil gently for around 4 minutes. Never leave the saucepan because it can boil over! Let it cool and then poor over your cake once it has cooled completely down. Decorate anyway you like or not! :)
