French chocolate cake

Most French chocolate cakes contain around 180g sugar. I use 140g and 20 drops of vanilla or caramel stevia instead. I feel the end result is the same 🙂


Prep Time: 10-15 mins
Cook Time: 30 mins
Yields: 10

Ingredients

  • 200g butter
  • 200g semi dark chocolate
  • 4 eggs (5 eggs if they are small)
  • 140g coconut palm sugar or raw cane sugar (Often I use 75g palm sugar and 75g raw organic cane sugar)
  • 20 drops vanilla- or caramel stevia
  • 30g fine spelt wheat or almond flour (gluten free) or other 'flour' you prefer

Method

  1. Heat your oven to 170 degrees Celsius.
  2. In a small saucepan gently melt together the butter and chocolate but watch the heat! You can also do this in a bowl over boiling water.
  3. Mix well together eggs and sugar until quite light and fluffy.
  4. Let the chocolate-butter mixture cool down a bit and then mix gently with the egg mixture.
  5. Add the 'flour' and bake in a 24cm cake mold for around 28-30 minutes. But watch out, the French magic disappears if you bake it for too long! :-)
