Favorite chocolate chip muffins

Just like all recipes I post on this website this is a favorite loved dearly by everybody. My Hanna is now 14 and has been making these all by her self for the last two years whenever she feels like it 🙂

I am sure you will enjoy them as well.

*I use organic ingredients whenever I can.

Hanna bakar muffins


My Recipe

Prep Time: 10 mins
Cook Time: 10-15 mins
Yields: 10

Ingredients

  • 2-3 eggs
  • 80g coconut palm sugar or organic sugar (less refined than the white varieties)
  • 1 tsp vanilla or vanilla essence (optional)
  • 180g fine spelt
  • 3 tsp wheat and aluminium free baking powder
  • 100g butter
  • 100g chopped chocolate *(I use 56% chocolate most of the time).

Method

  1. Heat oven to 180°C.
  2. Mix well together eggs, sugar and vanilla.
  3. Melt the butter in a small saucepan.
  4. Add the spelt, baking powder and melted butter into the egg/sugar/vanilla blend.
  5. Add some warm water, pure yoghurt, sour cream or 'milk' if the dough feels too stiff. Do not stir the dough too much, so it won't become chewy.
  6. Add the chopped chocolate and mix roughly with a spoon.
  7. Put your dough into muffin molds. If the molds are small this will make around 10 muffins.
  8. Put the muffin molds (with the dough in them) on an oven proof dish or your oven plate and bake for around 10-14 minutes.
  9. If you pick one muffin with an uncooked spaghetti (when you suspect it is ready) and the spaghetti comes clean out the muffins are baked all way through.
