Tasty chicken soup with peanut butter, paprika and curry

This is a winner! It’s from my show (2nd series) Homemade with Ebba.

 

It might seem difficult to make, but it is not. If you are inviting guests over for this one, it is a good idea to start early. All soups get better if they get to simmer gently for at least an hour. And chopping vegetables takes time yes. BUT you can throw everything in your food processor to make life easier for you. Especially if you are doubling the recipe (which I do often when guests are coming).

 

This recipe would be perfect for around 6-7 people (7 even there are kids in the crowd or light eaters) 🙂

 

As always I favor organic and local ingredients when possible.

 


My Recipe

Prep Time: 20-30 mins
Cook Time: 45 mins
Yields: 6-7

Ingredients

  • 3 tbsp red curry paste
  • 1 onion AND 4 garlic cloves
  • 1 good tbsp curry AND 1 tbsp paprika powder (the spice) AND 1 tbsp strong/hot paprika powder
  • 5 tbsp tomato paste
  • 1 pepper or 1 jar grilled pepper
  • 4-5 carrots (depending on size)
  • 1/2 sweet potato (or 1 if it is small)
  • 1/2 zucchini
  • 2 tbsp coconut palm sugar
  • 3 tbsp coarse peanut butter
  • 600ml coconut milk
  • 500ml chicken stock OR 500ml water and 3-4 tbsp vegetable/chicken stock (in powder) or 3-4 vegetable cubes (I always buy organic)
  • 1 tsp sea salt
  • 3 chicken breasts

Method

  1. Put around 100ml of water with the red curry paste in a 3L pot/saucepan and warm together
  2. Cut your onion and garlic and throw in the pot and start simmering everything together gently
  3. Add all your spices
  4. Wash your vegetables, cut them in bite size pieces and add them to your saucepan
  5. Add the rest of the recipe but not the chicken and let simmer/cook for around 45 minutes.
  6. Cut your chicken breasts in bite size pieces and fry them until almost done. Then add them to your soup (after it has been cooking for 40-45 minutes), wait for around 5-10 minutes and then serve.

Additional Info

I often add around 1 tbsp of chopped ginger as well to this soup. It is lovely :) I serve with toasted sourdough bread with olive oil and sea salt .. crazy good! :)
