Delicous carrot soup (vegan)

This one is ever so lovely, healthy, healing and easy to make. You chop everything real coarse (which takes much less time) because in the end you blend it with a handheld blender.



We always enjoy this delicious soup with these classic spelt mozzarella buns. I have not met anybody who does not love them (and love how little time it takes to make them).

My Recipe

Prep Time: 10 mins
Cook Time: 20-30 mins
Yields: 5


  • 500g oganic carrots
  • 2 organic apples
  • 1 leek
  • 2 garlic cloves
  • 1 tbsp shredded ginger or around 2 cm piece of ginger
  • 2 tsp curry AND 1/2 tsp cinnamon AND 1 tsp seasalt
  • 500 ml organic vegetable stock (or 500ml water and around good 2 tbsp powdered vegetable stock (I buy in jars) or 2 cubes stock)
  • 400ml (one can) organic coconut milk


  1. Wash your carrots, apples and leek, cut everthing coarsely and throw into a medium sized sauce pan (3L)
  2. Add the rest and let boil gently for around 20-30 minutes.
  3. Blend everything with a handheld blender and serve .. Yum!

Additional Info

You can flavour the soup with lemon or lime juice if you like and of course sea salt/Himalaya salt.
