Date and chocolate cake

Cook Time: 30-40 mins
Yields: 8


  • 1 cup almonds or 150g (& you can use any nuts you like)
  • 1 cup pitted dates or around 190g
  • 100g dark chocolate (or other you like)
  • 40g coconut palm sugar
  • 2 tbsp spelt, desiccated coconut, coconut flour, glutenfree flour, your choice!
  • 1/2 tsp vanilla powder or extract (optional)
  • 3 tbsp water
  • 2 eggs
  • 1 tsp cream of tartar or wheat and aluminum free baking powder
  • Whipped cream on top and fresh berries/fruits you love (and are in season)


  1. Grind the almonds/nuts slowly in your blender/food processor.
  2. Cut the dates and chocolate quite small.
  3. Mix all of the ingredients together in a bowl and then let it stand for 15 minutes.
  4. Put in a 24cm cake mould and bake at 150 degrees Celcius for around 30-40 minutes.
  5. Let cool and spread whipped cream on top and decorate with berries.. or not:)
