Adorable chia take away!

This is very often my daughter’s lunch in school. Probably because it is so quick and easy to make and very nutritious .. and she loves it 🙂


My Recipe

Ingredients

  • 3 tbsp chia seeds
  • 200 ml organic coconut or almond milk
  • Optional what you add into your chia pudding. We love; 1/2 grated apple, 1/2 banana, 5 drops vanilla stevia, raspberry purée (see below additional info), goji berries, hemp seeds, cacao nibs, mulberries .. you decide! You can sometimes keep it simple and sometimes add more flavours.

Method

  1. Mix together in a glass jar or other chia and milk and stir every now and then while this starts to become a pudding (around 10-15 minutes).
  2. While you wait you can grate the apple, banana or other you love into your chia pudding.
  3. Garnish with what you love and enjoy and take away with you to school or work :)

Additional Info

Berry puree is very lovely on top of chia puddings and also with oat porridge. To make a berry puree you can either purée 2 handfull of berries with a little bit of water (1-2 tbsp), add around 1 tsp lemon juice (as a preservative), put in a jar and it will keep for a day or two in your fridge. Or you can buy frozen raspberries and boil around two handfuls in just a little bit of water (1-2 tbsp). Then you simply mash them together, add the lemon juice and this will keep for around 2-3 days in your fridge. You can add 5 drops of vanilla stevia into your raspberry purée or 1-2 tsp organic honey to sweeten a bit. Optional.
