And just FYI, I love coffee, coffee and a cake .. midday .. I so do! But I can't drink coffee every day, it makes me anxious, so I drink organic English breakfast tea with almond milk. I do not miss coffee, when I do :)
For those who cannot even tolerate the spelt waffles (they are much easier on the stomach than the typical wheat waffles since the gluten in spelt is water soluble) you do not have to despair!

I love this one. Did you know that dates are the best option to sweeten your life with. I highly recommend them for your cakes, smoothies etc.
And it is perfect to give small children dates (pitted!) as candy. Probably best to cut them in half for a young child. Here below you have the version with spelt and butter in the base (instead of almonds, desiccated coconut and coconut oil).
I love salad dressings. I can eat salad all day if I have the right dressing. Here is another one, where I use organic honey. It's delicous as well! :)
The recipe for this one is simply:
1 good tsp tahini or almond butter
60ml coldpressed olive oil
Just a tiny bit of sea salt (optional but lovely)
Stir well in a jar or glass and pour over your salad!
What I love on my salad is lots of hemp seeds, ripe mango or dried cranberries (or both)....
This is a cake that my Ebba (born 1911, I am named after her) used to bake a lot, and not only around Christmas (even though it is always called Christmas cake in Iceland). It is easy to make and tastes lovely, especially with coffee or tea.
